Run
Get-PoshThemes
This will list all the themes like this:

Once you've selected a theme you like, stelbent.minimal in my case, run
notepad $profile
Which should open notepad. Now, add
Set-PoshPrompt -Theme THEMENAMEHERE
For example:

Now, if you restart the Windows Terminal, you will see the desired theme.
